Cinnamon Bun Pumpkin Pancakes

Is there really anything better!? This recipe screams FALL!!




*****For this recipe, you will want to pick up Trader Joe's Cinnamon Bun Spread as well as Aldi's seasonal Maple Vanilla Whipped Cream *****

(You can do without though, as they are just for topping purposes.)


Ingredients:

- 2 cups of flour

- 1/3 cup sugar

- 5 tsp. baking powder (makes them extra fluffy!!)

- 1 tsp. salt

- 2 tsp. cinnamon

- 1/4 tsp. nutmeg

- 1 1/2 cups milk

- 2 eggs

- 1/2 cup oil

- 1 tsp. vanilla

- 1 cup homemade pumpkin puree (click for recipe!)

- whipped cream for topping


Directions:

  1. In large bowl, whisk together all dry ingredients.

  2. In a medium bowl combine all wet ingredients and whisk together until smooth

  3. Combine the wet ingredients into the whisked dry ingredients and mix until combined. (some lumps are okay.)

  4. Heat buttered/greased pan to medium heat

  5. Scoop by the 1/4 cup into pan and cook 3-4 minutes until large bubbles appear, flip

  6. Top with more cinnamon, Trader Joe's Cinnamon Bun Spread as well as Aldi's seasonal Maple Vanilla Whipped Cream

  7. ENJOY!
