Potato Pancakes (Latke's)

In honor of Hanukkah starting, let's start this celebration off with one of my absolute FAVORITE side dishes... POTATO PANCAKES, otherwise known as Latke's! Let me know in the comments if you prefer to dip yours in apple sauce or sour cream! I prefer apple sauce š
Disclaimer: You will be eating latke's for the rest of the week with your breakfast, lunch and dinner because they are THAT good.



INGREDIENTS:
3 large russet potatoes
1 tbs. vinegar or lemon juice (for ice bath)
1 onion sliced thin
5 tbs. corn starch
3 eggs
1/2 cup crushed townhouse or ritz crackers (or matzo meal)
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp black pepper
oil for frying (enough to fill pan so that oil is about 1/2 inch.)
DIRECTIONS:
Note: If making ahead, you can preheat oven to 200 degrees and store in oven.
Scrub your potatoes clean and do not peel.
Fill a large bowl with ice, water, and the 1 tbs. vinegar or lemon juice.
Shred the potatoes with a box grater (large holes) or a food processor. As you are shredding them, add them to a colander and put into the bowl with the ice water to prevent oxidation (discoloration.)
Once done grating, strain well from the ice water mixture. Use a dish towel to wring out the rest of the residual water.
Add shredded potatoes to a large bowl as well as the corn starch, onion, eggs, and crushed crackers or matzo meal and mix well with your hands.
Season the potato mixture with the salt, pepper, and garlic powder. Mix again with your hands.
Heat up a large skillet with the oil on medium-low heat.
When the oil is hot enough to fry, (test by putting the back of a wooden spoon into the oil, if bubbles form around it, its hot!)
Work in batches, and do not overcrowd. Use 1/3 measuring cup to portion out into the oil, and press down with spatula or bottom of measuring cup to flatten into a 'pancake'
Fry 3-6 minutes until deep golden brow, and flip.
Sprinkle salt (i used Maldon Sea Salt flakes) over pancakes immediately after removing from oil so that the salt sticks.
Top with sour cream or apple sauce and enjoy ! (Or you can have them on the side for dipping.)
